Crab Fettuccine Alfredo

Crab Fettuccine Alfredo

Ingredients:
12 oz fettuccine pasta
1 lb lump crab meat (fresh, canned, or imitation)
2 cups heavy cream
1 cup grated Parmesan cheese
1/2 cup unsalted butter
3-4 garlic cloves (minced)
1/4 tsp ground nutmeg
Salt and pepper (to taste)
2 tbsp fresh parsley (chopped for garnish)
Lemon wedges (for serving, optional)

Directions:
Cook the Fettuccine:
In a large pot, bring salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Drain the pasta, but reserve about 1/2 cup of the pasta water in case you need to thin the sauce later.
Prepare the Alfredo Sauce:
In a large skillet or pan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, stirring constantly, until fragrant (but not browned).
Add the Cream:
Slowly pour in the heavy cream while stirring. Let the mixture simmer for 3-4 minutes, stirring occasionally, until it slightly thickens.
Add the Parmesan:
Gradually whisk in the grated Parmesan cheese until fully melted and the sauce becomes creamy and smooth. If the sauce seems too thick, add a little bit of the reserved pasta water to achieve the desired consistency.
Season the Sauce:
Stir in the ground nutmeg, and season with salt and pepper to taste. Let the sauce simmer for 2-3 minutes to allow the flavors to meld.
Add the Crab:
Gently fold the lump crab meat into the Alfredo sauce, being careful not to break up the crab too much. Let the crab heat through for about 1-2 minutes.
Combine with the Pasta:
Add the cooked fettuccine to the skillet with the Alfredo sauce and crab, tossing to coat the pasta evenly with the sauce. If the sauce is too thick, add more pasta water or a little extra cream.
Garnish and Serve:
Remove the skillet from heat and sprinkle the dish with freshly chopped parsley. Serve the Crab Fettuccine Alfredo immediately with lemon wedges on the side, if desired, for an extra burst of freshness.
