Ingredients

  • 1 lb (450 g) beef stew meat, cut into bite-sized pieces

  • 1 tablespoon olive oil or vegetable oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, peeled and diced

  • 2 celery stalks, diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 (15 oz) can diced tomatoes

  • 1 (15 oz) can kidney beans, drained and rinsed

  • 1 (15 oz) can black beans, drained and rinsed

  • 4 cups beef or chicken broth

  • 2 teaspoons chili powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon cumin

  • Salt and black pepper, to taste

  • Optional: 1 teaspoon Worcestershire sauce for extra depth

  • Optional garnish: chopped fresh parsley or shredded cheese


Directions

1. Brown the Beef

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.

  2. Add the beef stew meat and season with salt and pepper.

  3. Brown the beef on all sides for 5–7 minutes. Remove and set aside.


2. Sauté the Vegetables

  1. In the same pot, add onion, garlic, carrots, celery, and bell peppers.

  2. Cook for 5–6 minutes until vegetables are slightly softened and fragrant.


3. Build the Stew

  1. Return the beef to the pot.

  2. Add diced tomatoes, kidney beans, black beans, and broth.

  3. Stir in chili powder, smoked paprika, cumin, and Worcestershire sauce (if using).

  4. Bring to a gentle boil, then reduce heat to low.
