Country Ranch Green Beans & Potatoes with Bacon

Ingredients:
1 pound fresh green beans, trimmed
1 pound small red potatoes, quartered
6 slices bacon, diced
1 packet ranch seasoning mix
1/4 cup olive oil
Salt and pepper to taste

Directions:
1. In a large pot, bring water to a boil. Add green beans and potatoes, and cook until tender, about 10-15 minutes. Drain and set aside.
2. In a large skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon grease in the skillet.
3. Add olive oil to the skillet with the bacon grease. Stir in ranch seasoning mix until well combined.
4. Add the cooked green beans and potatoes to the skillet, tossing to coat in the ranch mixture.
5. Cook for an additional 5 minutes to heat through, then stir in the cooked bacon.
6. Season with salt and pepper to taste before serving.
