Country Ranch Green Beans ‘n Potatoes with Bacon
Ingredients:
1 pound fresh green beans, trimmed and cut into bite-sized pieces
1 pound baby potatoes, halved or quartered
6 slices bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
1 packet (1 ounce) ranch seasoning mix
1/2 cup chicken broth
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Cook Bacon:
In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set aside, leaving the bacon drippings in the pan.
Cook Vegetables:
Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for another 1 minute until fragrant.
Add the baby potatoes to the skillet and cook for 5-6 minutes, stirring occasionally.
Combine Ingredients:
Stir in the green beans and cook for another 2-3 minutes.
Sprinkle the ranch seasoning mix over the vegetables and stir to coat evenly.
Pour in the chicken broth and bring to a simmer.
Simmer:
Cover the skillet and reduce the heat to low. Simmer for 15-20 minutes, or until the potatoes and green beans are tender.
Finish:
Stir in the cooked bacon and cook for an additional 2 minutes to heat through.
Season with salt and pepper to taste.
Serve:
Transfer the green beans and potatoes to a serving dish. Garnish with fresh parsley if desired. Serve warm.
