Country Ranch Green Beans ‘n Potatoes with Bacon
Ingredients:
1 lb fresh green beans, trimmed and cut into 1-inch pieces
1 lb baby potatoes, halved or quartered (depending on size)
6 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
1/2 cup ranch seasoning mix (dry)
1/2 cup chicken broth
2 tablespoons olive oil
Salt and pepper, to taste
Optional: 1/2 cup shredded cheddar cheese
Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Prepare Bacon:
In a large oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon drippings in the skillet.
Cook Potatoes:
Add the olive oil to the skillet with the bacon drippings. Add the halved baby potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to brown.
Add Onion and Garlic:
Add the diced onion to the skillet and cook until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional 1 minute.
Add Green Beans and Ranch Seasoning:
Stir in the green beans and ranch seasoning mix, making sure the seasoning is evenly distributed.
Add Chicken Broth:
Pour in the chicken broth and stir to combine. Bring to a simmer.
Bake:
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the green beans and potatoes are tender and cooked through.
Add Bacon and Optional Cheese:
Remove the skillet from the oven. Stir in the cooked bacon. If desired, sprinkle shredded cheddar cheese on top and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:
Season with additional salt and pepper, if needed. Serve warm as a hearty side dish.
