Cottage Pie Baked Potatoes
Ingredients:
For the Filling:
1 lb (450g) ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 cup beef broth
1 tablespoon all-purpose flour
Salt and black pepper to taste
1/2 teaspoon dried thyme
For the Mashed Potatoes:
4 large russet potatoes, peeled and cubed
1/2 cup milk
1/4 cup unsalted butter
Salt and black pepper to taste
For Assembly:
1/2 cup shredded cheddar cheese (optional)
Fresh parsley for garnish (optional)
Directions:
Prepare the Mashed Potatoes:
Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain the potatoes and return them to the pot.
Add the milk and butter to the potatoes. Mash until smooth and season with salt and black pepper to taste. Set aside.
Prepare the Filling:
In a large skillet over medium heat, cook the ground beef until browned. Remove excess grease if necessary.
Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
Stir in the tomato paste and Worcestershire sauce. Cook for 1-2 minutes until the tomato paste darkens slightly.
Sprinkle the flour over the meat mixture and stir to combine. Gradually add the beef broth while stirring, and cook until the mixture thickens.
Stir in the frozen peas and carrots. Season with salt, black pepper, and dried thyme. Cook for an additional 5 minutes until the vegetables are tender.
Assemble and Bake:
Preheat the oven to 400°F (200°C).
Spoon the beef mixture into oven-safe baking dishes or ramekins.
Top with the mashed potatoes, spreading them evenly. If desired, sprinkle with shredded cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbly.
Garnish and Serve:
Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired. Serve warm.
