These Cottage Cheese & Herb Chicken Meatballs are anything but ordinary. 1 lb ground chicken

½ cup cottage cheese

1 large egg

½ cup breadcrumbs (plain or Italian-style)

2 cloves garlic, minced

1 tsp Italian seasoning

¼ cup grated Parmesan cheese

½ tsp salt

½ tsp black pepper

1 tbsp olive oil (for cooking)
Optional additions:

Directions
1️⃣ Preheat & Prep
Preheat oven to 400°F (200°C) or heat a skillet over medium heat if pan-frying.
2️⃣ Mix the Meatballs
In a large bowl, combine ground chicken, cottage cheese, egg, breadcrumbs, garlic, Italian seasoning, Parmesan, salt, and pepper. Mix gently until just combined—do not overmix.
3️⃣ Shape
Using a spoon or cookie scoop, form the mixture into 1½-inch meatballs and place on a lined baking sheet or plate.
4️⃣ Cook
Oven Method:
Bake for 18–22 minutes, or until cooked through and lightly golden.
Skillet Method:
Heat olive oil in a skillet. Cook meatballs, turning occasionally, for 10–12 minutes, until browned on all sides and fully cooked.
5️⃣ Serve Warm
Serve immediately with your favorite sides or sauces.
