1 cup (240g) cottage cheese

1 cup (120g) oat flour (or almond flour for low-carb)

1 large egg

Β½ tsp baking powder

Blend it smooth:
In a food processor or blender, blend the cottage cheese until smooth and creamy.

Mix it up:
In a mixing bowl, combine the blended cottage cheese, oat flour (or almond flour), egg, baking powder, and salt. Mix well until a dough-like batter forms.

Divide & shape:
Divide the batter into 4–6 portions. Shape each into a flat round on a parchment-lined baking sheet or shape directly on a nonstick skillet if cooking stovetop.

Cook it up:

Cook each flatbread for 2–3 minutes per side, until golden and cooked through.
