Corn Nuggets Recipe

Ingredients:
1 cup corn kernels, drained if canned, or thawed if frozen
1 cup creamed corn
1/2 cup all-purpose flour
1/2 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon sugar (optional, for a touch of sweetness)
1/4 cup milk
1 large egg, beaten
Oil for frying (vegetable, canola, or peanut oil)

Instructions:
Prepare the corn mixture:
In a medium bowl, mix together the corn kernels and creamed corn. Freeze the mixture for about 30 minutes, or until firm enough to form into small balls.
Make the batter:
In another bowl, combine the flour, cornmeal, baking powder, salt, and sugar (if using).
Stir in the milk and beaten egg until the batter is smooth.
Form the nuggets:
Scoop small portions of the frozen corn mixture and shape into bite-sized balls.
Dip each ball into the batter, coating well.
Fry the corn nuggets:
In a deep skillet or fryer, heat the oil to 350°F (175°C).
Fry the battered corn nuggets in small batches for 3-4 minutes, or until they are golden brown. Make sure not to overcrowd the pan.
Remove the nuggets and drain on a paper towel-lined plate.
Serve:
