Corn Nuggets

Ingredients:
2 cups canned or fresh corn kernels, drained
1/2 cup all-purpose flour
1/2 cup cornmeal
1/4 cup sugar
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
2 large eggs
1/4 cup milk
1 tbsp melted butter
Vegetable oil, for frying

Directions:
Mix the Dry Ingredients:
In a large mixing bowl, combine the flour, cornmeal, sugar, baking powder, salt, and black pepper.
Prepare the Batter:
In another bowl, whisk together the eggs, milk, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the corn kernels, ensuring they are evenly distributed throughout the batter.
Heat the Oil:
In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat. The oil should reach a temperature of about 350°F (175°C).
Fry the Corn Nuggets:
Using a spoon or a small scoop, carefully drop spoonfuls of the corn batter into the hot oil.
Fry the nuggets in batches to avoid overcrowding, cooking each side for 2-3 minutes until they are golden brown and crispy.
Drain and Serve:
Using a slotted spoon, remove the fried corn nuggets from the oil and place them on a paper towel-lined plate to drain any excess oil.
Serve hot with your favorite dipping sauce.
