Corn Fritters!

Ingredients:
1 cup corn kernels (fresh, frozen, or canned, drained)
½ cup all-purpose flour
¼ cup cornmeal
1 large egg
½ cup milk
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika (optional, for extra flavor)
2 tablespoons green onions, chopped (optional)
Oil for frying (vegetable or canola)

Instructions:
Step 1: Prepare the Batter
In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and paprika (if using).
In another bowl, whisk together the egg and milk. Add the corn kernels and green onions (if using) to the wet mixture.
Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick but not dry; if it’s too thick, add a little more milk.
Step 2: Heat the Oil
In a large skillet, heat about ½ inch of oil over medium heat until shimmering (about 350°F or 175°C).
Step 3: Fry the Fritters
Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon if needed. Don’t overcrowd the pan; fry in batches if necessary.
Cook for about 3-4 minutes on each side, or until golden brown and crispy.
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

Step 4: Serve
Serve the corn fritters warm with your favorite dipping sauce, such as ranch dressing, sour cream, or salsa.
