Corn Fritters
Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup milk
1 egg, beaten
1 tablespoon melted butter
2 cups fresh corn kernels
1/4 cup chopped green onions
Vegetable oil for frying
Directions:
1. In a large bowl, combine flour, baking powder, salt, and black pepper.
2. In a separate bowl, mix milk, beaten egg, and melted butter.
3. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
4. Fold in the corn kernels and chopped green onions.
5. Heat vegetable oil in a skillet over medium heat.
6. Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon.
7. Fry until golden brown, about 3-4 minutes per side.
8. Remove from skillet and drain on paper towels.
