Copycat Supreme Pasta Salad
Ingredients:
12 oz pasta (rotini or penne work well)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/2 cup black olives, sliced
1/2 cup pepperoni slices or diced salami
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
For the Dressing:
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper, to taste
Instructions:
1. Cook the Pasta:
Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool. Set aside.
2. Prepare the Vegetables:
In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and pepperoni (or salami).
3. Make the Dressing:
In a small bowl, whisk together the mayonnaise, sour cream, red wine vinegar, Dijon mustard, olive oil, Italian seasoning, garlic powder, and onion powder. Season with salt and pepper to taste.
4. Combine Ingredients:
Add the cooked pasta to the bowl with the vegetables and meat.
Pour the dressing over the pasta mixture and toss until everything is well coated.
5. Add Cheese:
Gently fold in the shredded mozzarella cheese and grated Parmesan cheese.
6. Chill:
Cover and refrigerate the pasta salad for at least 1 hour to allow the flavors to meld.
7. Serve:
Give the pasta salad a quick toss before serving. Enjoy it chilled!
