Comforting Ground Beef & Noodle Casserole
Ingredients:
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 (15 oz) can tomato sauce
1 (14.5 oz) can diced tomatoes, undrained
1 teaspoon Italian seasoning
Salt and pepper to taste
8 oz egg noodles
1 cup sour cream
1 cup cottage cheese
2 cups shredded cheddar cheese
1/4 cup green onions, chopped (optional for garnish)
Directions:
Cook the Beef:
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until browned.
Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
Prepare the Noodles:
While the beef mixture simmers, cook the egg noodles according to package instructions. Drain and set aside.
Assemble the Casserole:
In a medium bowl, mix together the sour cream and cottage cheese. Stir in the cooked noodles.
In a greased 9×13-inch baking dish, layer half of the noodle mixture, then half of the beef mixture.
Repeat the layers, ending with the beef mixture on top.
Add Cheese and Bake:
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Garnish with chopped green onions if desired.
Serve hot, and enjoy!
