📝 Ingredients:
🥧 1 pre-baked 9-inch pie crust
🥛 2 cups whole milk
🥥 1 cup canned coconut milk
🍚 ¾ cup granulated sugar
🌽 ¼ cup cornstarch
🥚 4 large egg yolks
🍦 1 tsp vanilla extract
👩🍳 Instructions:
Combine the milks – In a medium saucepan, whisk together whole milk and coconut milk over medium heat.
Mix dry ingredients – In a separate bowl, whisk sugar and cornstarch together. Add to the warm milk mixture, whisking constantly until smooth.
Temper the yolks – In another bowl, beat the egg yolks. Slowly add a few spoonfuls of the hot milk mixture to the yolks, whisking quickly to prevent scrambling.
Combine & thicken – Pour the tempered yolks back into the saucepan. Cook over medium heat, whisking constantly, until the mixture thickens (about 5–8 minutes).
Add vanilla – Remove from heat and stir in the vanilla extract.
Fill the crust – Pour the coconut custard into your pre-baked pie crust. Smooth the top and let it cool to room temp.
Chill – Cover with plastic wrap (touching the surface to prevent a skin) and refrigerate for at least 4 hours or until fully set.
