Classic Tres Leches Cake
Ingredients (Serves 12)
For the Cake:
1 cup all-purpose flour
1½ tsp baking powder
¼ tsp salt
5 large eggs, separated
1 cup granulated sugar (divided)
1⁄3 cup whole milk
1 tsp vanilla extract
For the Milk Mixture:
1 can (12 oz) evaporated milk
1 can (14 oz) sweetened condensed milk
½ cup whole milk or heavy cream
For the Topping:
1½ cups heavy whipping cream
¼ cup powdered sugar
½ tsp vanilla extract
Cocoa powder for dusting
Fresh strawberries for garnish

Instructions
1. Preheat & Prep:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Make the Cake Batter:
Sift flour, baking powder, and salt.
Beat egg yolks with ¾ cup sugar until pale and thick. Stir in milk and vanilla.
In a separate bowl, beat egg whites until soft peaks form. Gradually add remaining ¼ cup sugar and beat until stiff.
Gently fold egg whites into yolk mixture. Add dry ingredients slowly and fold until combined.
3. Bake:
Pour into the prepared dish and bake 25–30 minutes or until golden and a toothpick comes out clean. Let cool.
4. Soak the Cake:
Whisk together the three milks. Poke holes all over the cake with a fork or skewer and slowly pour the mixture over it. Chill for at least 4 hours (or overnight).
5. Top It Off:
Whip heavy cream, sugar, and vanilla to stiff peaks. Spread over the cake. Dust with cocoa powder and top with a strawberry.
