Ingredients

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes or whole tomatoes, blended

1 cup vegetable or chicken broth

½ teaspoon sugar (optional, to balance acidity)

Salt and black pepper, to taste

½ cup heavy cream or half-and-half (optional, for creamy tomato soup)

Fresh basil or parsley, for garnish
Directions
1️⃣ Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for 5–7 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
2️⃣ Add Tomatoes & Simmer
Stir in the crushed tomatoes and broth. Add sugar (if using), salt, and black pepper. Bring to a gentle simmer, then reduce heat to low. Cover and simmer for 15–20 minutes, allowing the flavors to meld.
3️⃣ Blend Until Smooth
Using an immersion blender, blend the soup until smooth and velvety. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth, then return to the pot.
4️⃣ Finish & Serve
Stir in the cream if you prefer a creamy tomato soup. Taste and adjust seasoning as needed. Serve hot, garnished with fresh basil or parsley.
