Classic Southern Sweet Potato Delight
Ingredients:
For the Sweet Potatoes:
4 cups mashed sweet potatoes (about 4-5 medium sweet potatoes)
1/2 cup granulated sugar
2 large eggs, beaten
1/3 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
For the Topping:
1/2 cup all-purpose flour
1/2 cup brown sugar
1/4 cup unsalted butter, melted
1/2 cup chopped pecans
Directions:
Prepare the Sweet Potatoes:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large bowl, combine the mashed sweet potatoes, granulated sugar, beaten eggs, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth and well combined.
Pour the sweet potato mixture into the prepared baking dish, spreading it evenly.
Make the Topping:
In a separate bowl, mix together the flour, brown sugar, and melted butter until crumbly.
Stir in the chopped pecans.
Assemble the Casserole:
Sprinkle the pecan topping evenly over the sweet potato mixture.
Bake:
Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
Serve:
Let the casserole cool slightly before serving.
