Ingredients:
For the Meatloaf:
1 1/2 lbs (680 g) ground beef
1/2 lb (225 g) ground pork
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup milk
2 large eggs
1/4 cup ketchup
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried parsley
1 tsp salt
1/2 tsp ground black pepper
For the Glaze:
1/2 cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, milk, eggs, ketchup, Worcestershire sauce, dried thyme, dried parsley, salt, and black pepper. Mix until all the ingredients are well combined, but do not overmix as this can make the meatloaf tough.
Shape the Meatloaf:
Transfer the meatloaf mixture to the prepared baking sheet or loaf pan. Shape it into a loaf, smoothing out the top and edges.
Prepare the Glaze:
In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar until smooth. Spread half of the glaze evenly over the top of the meatloaf.
Bake the Meatloaf:
Bake the meatloaf in the preheated oven for 45 minutes. Remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).
Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. This helps to keep it moist and makes it easier to slice. Serve warm with your favorite sides
