Classic Italian Bolognese Sauce
Ingredients:
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 2 carrots, finely chopped
– 2 celery stalks, finely chopped
– 4 cloves garlic, minced
– 1 pound ground beef
– 1 pound ground pork
– 1 cup whole milk
– 1 cup dry white wine
– 1 can (28 ounces) crushed tomatoes
– 2 tablespoons tomato paste
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon crushed red pepper flakes
– 1/2 cup fresh basil, chopped
– 1/2 cup fresh parsley, chopped
– Freshly grated Parmesan cheese, for serving
Directions:
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft and the onion is translucent, about 10 minutes.
2. Add the ground beef and pork to the pot. Cook until browned, breaking up the meat with a spoon as it cooks.
3. Pour in the milk and cook, stirring occasionally, until the milk has evaporated, about 10 minutes.
4. Add the white wine and cook until it has evaporated, about 10 minutes.
5. Stir in the crushed tomatoes, tomato paste, oregano, dried basil, salt, black pepper, and crushed red pepper flakes. Bring to a boil, then reduce heat and simmer, uncovered, for 2 to 3 hours, stirring occasionally.
6. Stir in the fresh basil and parsley. Adjust seasoning with additional salt and pepper, if needed.
7. Serve the Bolognese sauce over your favorite pasta, topped with freshly grated Parmesan cheese.
