Classic Homemade Summer Sausage
Ingredients:
2 lbs ground beef (80/20 blend)
1/2 lb ground pork
1/4 cup soy sauce
1/4 cup water
2 tablespoons curing salt (Prague Powder #1)
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon ground mustard
1 teaspoon ground coriander
1 teaspoon sugar
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon liquid smoke (optional)
Directions:
Prepare the Meat Mixture:
In a large bowl, combine the ground beef and ground pork.
In a separate small bowl, mix together the soy sauce, water, curing salt, and all the spices (black pepper, garlic powder, onion powder, paprika, ground mustard, ground coriander, sugar, and red pepper flakes).
Season the Meat:
Pour the spice mixture over the ground meat and mix thoroughly until the spices are evenly distributed.
Cover the bowl with plastic wrap and refrigerate for at least 24 hours to allow the flavors to meld.
Shape and Cook:
Preheat your oven to 300°F (150°C).
Divide the meat mixture into two portions and shape each into a log about 12 inches long and 2 inches in diameter.
Place the logs on a rack over a baking sheet or in a roasting pan.
Bake in the preheated oven for 2 to 2.5 hours, or until the internal temperature reaches 160°F (71°C).
Cool and Slice:
Remove the sausages from the oven and let them cool to room temperature.
Once cooled, wrap in plastic wrap and refrigerate for at least 24 hours before slicing.
Serve:
Slice and enjoy your homemade summer sausage as a snack, in sandwiches, or with cheese and crackers.
