Classic Homemade Italian Tomato Sauce

Ingredients:
2 lbs (900g) ripe tomatoes, peeled and chopped
1 medium onion, finely chopped
2 cloves garlic, minced
1/4 cup (60 ml) olive oil
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 cup (60 ml) fresh basil leaves, chopped (optional)
1 bay leaf
1/4 cup (60 ml) red wine (optional)
1 tablespoon tomato paste (optional)

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
3. Stir in the chopped tomatoes, sugar, salt, black pepper, oregano, and dried basil. Add the bay leaf.
4. If using, stir in the red wine and tomato paste. Bring the sauce to a simmer.
5. Reduce the heat to low and let the sauce simmer uncovered for 45 minutes to 1 hour, stirring occasionally, until it thickens to your desired consistency.
6. Remove the bay leaf and stir in the fresh basil if using. Adjust the seasoning with additional salt and pepper if needed.
7. Use the sauce immediately or let it cool and store in airtight containers in the refrigerator for up to a week, or freeze for longer storage.
