Filling:

2 cups cooked chicken, diced

½ cup celery, diced

⅓ cup butter

⅓ cup all-purpose flour

1 ¾ cups chicken broth

⅔ cup milk or half-and-half

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon dried thyme (optional)
Crust:

1 prepared pie crust (top only or top & bottom)

1 egg, beaten (for egg wash – optional)
🍽️ Directions
1️⃣ Preheat Oven
Preheat oven to 400°F (200°C).
2️⃣ Make the Sauce
In a large skillet or saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute, until lightly golden.
Slowly whisk in chicken broth and milk.
Cook, stirring constantly, until thick and creamy (about 3–5 minutes).
3️⃣ Add Filling
Stir in chicken, carrots, peas, celery, salt, pepper, garlic powder, onion powder, and thyme.
Remove from heat.
4️⃣ Assemble the Pie
Pour filling into prepared pie dish.
Top with pie crust, seal edges, and cut small slits to vent steam.
Brush crust with egg wash if desired.
5️⃣ Bake
Bake for 35–40 minutes, or until crust is golden brown and filling is bubbly.
If crust browns too fast, loosely cover edges with foil.
6️⃣ Rest & Serve
Let rest 10 minutes before slicing. Serve warm.
