Cinnamon Roll Blondies
Ingredients:
For the Blondies:
1 cup (226g) unsalted butter, melted
1 cup (200g) brown sugar, packed
1/2 cup (100g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups (250g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon
For the Cinnamon Swirl:
1/4 cup (50g) brown sugar, packed
1 tablespoon ground cinnamon
For the Cream Cheese Glaze:
4 oz (113g) cream cheese, softened
1 cup (120g) powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch (23×33 cm) baking pan with parchment paper.
Make the Blondie Batter:
In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined.
Add the eggs and vanilla extract, mixing until smooth.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Prepare the Cinnamon Swirl:
In a small bowl, mix together the brown sugar and ground cinnamon.
Assemble the Blondies:
Spread half of the blondie batter evenly in the bottom of the prepared baking pan.
Sprinkle the cinnamon sugar mixture over the batter.
Drop spoonfuls of the remaining blondie batter over the cinnamon sugar, and use a knife or skewer to swirl the batter slightly, creating a marbled effect.
Bake the Blondies:
Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Cool:
Remove from the oven and let cool in the pan for about 10–15 minutes, then transfer to a wire rack to cool completely.
Make the Cream Cheese Glaze:
In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, milk, and vanilla extract, mixing until well combined and creamy.
Glaze the Blondies:
Once the blondies are cool, drizzle the cream cheese glaze over the top. Cut into squares and serve.
