Crisp on the outside, soft and marshmallowy on the inside, and crowned with whipped cream and colorful fruits, it’s light, elegant, and perfect for festive tables. The meringue’s subtle sweetness pairs beautifully with tart berries, kiwi, and pomegranate seeds, making every bite a celebration.
Ingredients
For the Meringue

4 large egg whites, room temperature

1 cup superfine sugar

1 teaspoon cornstarch

1 teaspoon white vinegar

1 teaspoon vanilla extract
For the Topping

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

Optional festive garnish: pomegranate seeds, kiwi slices, mint leaves
Directions
1️⃣ Preheat & Prep
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. Draw a 7–8 inch circle as a guide for the pavlova.
2️⃣ Make the Meringue
In a clean, dry bowl, beat egg whites on medium speed until soft peaks form. Gradually add superfine sugar, one tablespoon at a time, beating until stiff and glossy peaks form.
Gently fold in cornstarch, vinegar, and vanilla extract.
3️⃣ Shape & Bake
Spoon meringue onto the parchment paper circle, smoothing edges and creating a slight well in the center.
Bake for 60–70 minutes, until meringue is crisp and dry to the touch. Turn off oven and leave pavlova inside to cool completely (1–2 hours) to prevent cracking.
4️⃣ Prepare the Whipped Cream
Whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
5️⃣ Assemble the Pavlova
Once cooled, transfer meringue to a serving plate. Spoon whipped cream into the center. Top with mixed berries and optional festive garnishes.
