Chow Mein Noodles with Chicken

Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breasts, thinly sliced
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil (for cooking)
For the Stir-Fry:
1 tablespoon vegetable oil
2 cups chow mein noodles (cooked according to package instructions)
1 cup shredded carrots
1 cup snap peas
1 cup bell peppers, thinly sliced (red, yellow, or green)
1/2 cup onion, thinly sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
For the Sauce:
1/4 cup soy sauce
2 tablespoons hoisin sauce
1 tablespoon oyster sauce (optional)
1 tablespoon rice vinegar
1 tablespoon sugar
1/2 cup chicken broth
1 tablespoon cornstarch (for thickening)

Directions:
Marinate the Chicken:
In a bowl, combine the chicken slices with soy sauce and cornstarch. Let it marinate for at least 15 minutes.
Prepare the Sauce:
In a small bowl, mix together soy sauce, hoisin sauce, oyster sauce (if using), rice vinegar, sugar, chicken broth, and cornstarch. Stir until well combined and the cornstarch is dissolved. Set aside.
Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken and cook until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Stir-Fry the Vegetables:
In the same skillet, add 1 tablespoon of vegetable oil.
Add onion, garlic, and ginger. Stir-fry for 1-2 minutes until fragrant.
Add the shredded carrots, snap peas, and bell peppers. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
Combine and Cook:
Add the cooked chow mein noodles and chicken back into the skillet with the vegetables.
Pour the sauce over the noodle and chicken mixture.
Toss everything together and cook for an additional 2-3 minutes, until the sauce has thickened and everything is heated through.
Serve:
Serve the chow mein noodles with chicken hot, garnished with sliced green onions or sesame seeds if desired.
