Chow Mein Noodles with Chicken

Ingredients:
8 oz chow mein noodles (or egg noodles)
1 lb boneless, skinless chicken breasts (sliced thinly)
2 tbsp vegetable oil (divided)
2 cloves garlic (minced)
1 small onion (sliced)
1 cup bell peppers (sliced; any color)
1 cup carrots (julienned)
1 cup bean sprouts
2 green onions (sliced)
1/4 cup soy sauce
2 tbsp oyster sauce (optional)
1 tsp sesame oil (optional)
Salt and pepper to taste

Instructions:
Cook the noodles:
Cook the chow mein noodles according to the package instructions. Drain and set aside.
Prepare the chicken:
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
Sauté the vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic, sliced onion, bell peppers, and carrots. Stir-fry for about 3-4 minutes, or until the vegetables are tender-crisp.
Combine chicken and noodles:
Return the cooked chicken to the skillet with the vegetables. Add the cooked chow mein noodles, bean sprouts, soy sauce, oyster sauce (if using), and sesame oil (if using). Toss everything together until well combined and heated through, about 2-3 minutes.
Garnish and serve:
Remove from heat and garnish with sliced green onions. Serve hot.
