Chocolate Rice Krispie Balls
Ingredients:
3 cups Rice Krispies cereal
1 cup creamy peanut butter
1 cup semisweet chocolate chips
1/4 cup unsalted butter
1/4 cup honey or light corn syrup
1 teaspoon vanilla extract
1/2 cup powdered sugar (optional, for rolling)
Directions:
Melt the Ingredients:
In a medium saucepan, combine the peanut butter, chocolate chips, unsalted butter, and honey (or light corn syrup).
Heat over low to medium heat, stirring constantly until the mixture is smooth and fully melted.
Remove from heat and stir in the vanilla extract.
Mix in the Rice Krispies:
In a large mixing bowl, pour the Rice Krispies cereal.
Pour the melted chocolate-peanut butter mixture over the cereal.
Gently stir until all the Rice Krispies are evenly coated with the chocolate mixture.
Form the Balls:
Let the mixture cool slightly, just until it is cool enough to handle.
Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
If desired, roll the balls in powdered sugar for extra sweetness.
Chill the Balls:
Place the Rice Krispie balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to allow the balls to set and firm up.
Serve:
Once set, transfer the Rice Krispie balls to an airtight container for storage.
