Chocolate Peanut Butter Muffins
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter (melted)
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup milk
1/2 cup peanut butter (smooth or chunky)
1/2 cup chocolate chips (optional)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups.
Mix the dry ingredients:
In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
Prepare the wet ingredients:
In a separate bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, whisking until well combined. Stir in the milk and peanut butter until smooth.
Combine the wet and dry ingredients:
Gradually fold the dry ingredients into the wet mixture, stirring just until combined. Be careful not to overmix. If desired, fold in the chocolate chips for extra richness.
Fill the muffin cups:
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake:
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Cool and serve:
Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
