Chocolate Covered Strawberry Crack

Chocolate Covered Strawberry Crack

Ingredients:
4 cups Rice Chex cereal (or any other similar cereal)
1 cup unsalted butter (2 sticks)
1 cup brown sugar, packed
1 cup creamy peanut butter
2 cups milk chocolate chips
1 cup freeze-dried strawberries, crushed (or fresh strawberries, chopped)
1 cup white chocolate chips
Sea salt, for sprinkling (optional)

Directions:
Prepare the Cereal:
In a large mixing bowl, add the Rice Chex cereal and set aside.
Make the Caramel Sauce:
In a medium saucepan over medium heat, melt the unsalted butter.
Stir in the brown sugar and peanut butter, mixing until the mixture is smooth and begins to bubble.
Continue cooking for an additional 2-3 minutes, stirring constantly.
Combine with Cereal:
Pour the warm caramel mixture over the Rice Chex cereal and gently fold until all the cereal is evenly coated.
Spread and Set:
Line a large baking sheet with parchment paper.
Spread the coated cereal mixture onto the prepared baking sheet in an even layer.
Allow it to cool for about 10-15 minutes.
Melt the Chocolate:
In a microwave-safe bowl, melt the milk chocolate chips in 30-second intervals, stirring after each interval until completely smooth.
Drizzle or pour the melted chocolate over the cooled cereal mixture, using a spatula to spread it evenly if desired.
While the chocolate is still wet, sprinkle the crushed freeze-dried strawberries over the top.
Add the White Chocolate:
In another microwave-safe bowl, melt the white chocolate chips in the same manner as the milk chocolate.
Drizzle the melted white chocolate over the cereal mixture in a zig-zag pattern.
Finish and Cool:
If desired, sprinkle a pinch of sea salt over the top for added flavor.
Allow the entire mixture to cool completely and harden, which will take about 30-60 minutes at room temperature.
Break Into Pieces:
Once set, break the Chocolate Covered Strawberry Crack into pieces and store in an airtight container.
