Chocolate Coconut Bliss Brownies
Ingredients:
For the Brownies:
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
For the Coconut Layer:
1 1/2 cups sweetened shredded coconut
1/2 cup sweetened condensed milk
1/2 teaspoon vanilla extract
For the Chocolate Ganache:
1/2 cup semi-sweet chocolate chips
1/4 cup heavy cream
Directions:
Prepare the Brownie Base:
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
In a medium bowl, whisk together the melted butter and sugar until smooth.
Add the eggs and vanilla extract, whisking until well combined.
Stir in the cocoa powder, flour, salt, and baking powder until just combined. Do not overmix.
Pour the brownie batter into the prepared baking dish and spread it evenly.
Bake the Brownies:
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Allow the brownies to cool completely in the pan.
Make the Coconut Layer:
In a small bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined.
Once the brownies have cooled, spread the coconut mixture evenly over the top of the brownies.
Prepare the Chocolate Ganache:
In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring after each, until the chocolate is melted and smooth.
Pour the ganache over the coconut layer, spreading it evenly with a spatula.
Chill and Serve:
Refrigerate the brownies for at least 30 minutes, or until the ganache is set.
Cut into squares and enjoy.
