Chocolate Chip Cheesecake Cookies
Ingredients:
8 oz cream cheese (softened)
1/2 cup unsalted butter (softened)
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cups semi-sweet chocolate chips
Directions:
Prepare the Cream Cheese Mixture:
In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
Mix Wet Ingredients:
Add the granulated sugar and beat until fluffy. Then, mix in the egg and vanilla extract until fully incorporated.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the cream cheese mixture, mixing until combined.
Add Chocolate Chips:
Fold in the chocolate chips using a spatula, ensuring even distribution throughout the dough.
Chill the Dough:
Cover the dough with plastic wrap and refrigerate for at least 30 minutes to firm up the mixture.
Preheat Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Shape the Cookies:
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, about 2 inches apart.
Bake:
Bake for 10-12 minutes, or until the edges turn lightly golden. The centers may appear slightly soft, but they will firm up as they cool.
Cool and Serve:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
