Ingredients:
2 boneless, skinless chicken breasts
2 tbsp olive oil
1 tbsp chipotle chili powder (or 1–2 chipotle peppers in adobo, finely chopped)
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
½ cup ranch dressing (store-bought or homemade)
1 cup shredded cheddar cheese (or Mexican blend cheese)
4 large flour tortillas
1 cup cooked rice (optional)
1 cup black beans, rinsed and drained (optional)
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions:
Marinate and grill the chicken:
In a bowl, mix olive oil, chipotle chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts thoroughly.
Preheat your grill or grill pan to medium-high heat. Grill chicken for 6–8 minutes per side, or until cooked through and nicely charred. Let rest for a few minutes, then slice thinly.
Warm the tortillas:
Heat the tortillas on a dry skillet or microwave until soft and pliable.
