Chinese Fried Rice Recipe

Ingredients:
2 cups cooked white rice (preferably day-old)
2 tbsp vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, corn)
2 eggs, beaten
3 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
2 green onions, sliced
Salt and pepper to taste

Instructions:
1. Prepare Rice: If using freshly cooked rice, spread it out on a tray to cool and dry slightly. Day-old rice works best because it’s less sticky.
2. Cook Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.
3. Add Vegetables: Add the mixed vegetables to the skillet and cook until tender, about 3-4 minutes.
4. Cook Eggs: Push the vegetables to one side of the skillet, and add the remaining tablespoon of oil to the other side. Pour in the beaten eggs and scramble them until fully cooked. Mix the eggs with the vegetables.
5. Add Rice: Increase the heat to high and add the cooked rice to the skillet. Stir-fry the rice with the vegetables and eggs, breaking up any clumps.
6. Season Rice: Pour the soy sauce, oyster sauce (if using), and sesame oil over the rice. Stir well to combine and heat through. Taste and adjust seasoning with salt and pepper as needed.
7. Finish: Stir in the green onions, and cook for an additional 1-2 minutes until everything is well mixed and heated through.
8. Serve: Serve the fried rice hot, as a side dish or a main course.
