Chinese Fried Rice

Ingredients:
4 cups (800g) cooked rice, preferably day-old
2 eggs, lightly beaten
1 cup (150g) mixed vegetables (peas, carrots, corn)
1/2 cup (75g) cooked chicken, diced (optional)
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon vegetable oil
2 green onions, chopped
Salt and pepper to taste

Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and cook until fragrant, about 1 minute.
3. Push the garlic to the side and pour the beaten eggs into the skillet. Scramble the eggs until fully cooked, then mix with the garlic.
4. Add the mixed vegetables and cook for 3-4 minutes, or until they are tender.
5. Stir in the diced chicken (if using) and cook for another 2 minutes.
6. Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry for 5-7 minutes until the rice is heated through.
7. Pour the soy sauce and sesame oil over the rice and mix well, ensuring the rice is evenly coated.
8. Season with salt and pepper to taste, and stir in the chopped green onions.
9. Serve hot as a main dish or side.
