Chinese Chop Suey
Ingredients
2 tablespoons vegetable oil
1 pound (450g) chicken breast or pork, thinly sliced
1 cup (150g) mushrooms, sliced
1 cup (150g) bell peppers, sliced
1 cup (150g) snap peas or snow peas
1 cup (150g) carrots, sliced
1 onion, sliced
2 cloves garlic, minced
1 tablespoon ginger, minced
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 tablespoon cornstarch
1/4 cup water
1 teaspoon sugar
Salt and black pepper, to taste
Cooked rice or noodles, for serving
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken or pork and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the mushrooms, bell peppers, snap peas, carrots, and onion. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Add the minced garlic and ginger to the skillet and cook for an additional 1 minute.
In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, cornstarch, water, and sugar. Stir until the cornstarch is dissolved.
Return the cooked chicken or pork to the skillet and pour the sauce over the top. Stir to combine and cook for another 2-3 minutes until the sauce has thickened and everything is well coated.
Season with salt and black pepper to taste.
Serve the Chop Suey over cooked rice or noodles.
