  • Juice of 1 lime

  • 1 cup Ataulfo mango, blended smooth

  • 2 cups diced mango (fresh, for folding in)

  • 1 ½ packets unflavored gelatin (~10.5 g or 1 tbsp)

  • 3 tablespoons water

Topping:

  • 1 cup mango-flavored gelatin, prepared and cooled to room temperature

  • Fresh mango cubes for decoration

  • (Optional) Whipped cream

Step 1: Prepare the Crust

  • Crush the Maria cookies into fine crumbs using a food processor or by placing them in a sealed bag and pounding with a rolling pin.

  • Mix the crumbs thoroughly with the melted butter until the texture resembles wet sand.

  • Press the mixture firmly into the bottom of a pie dish, creating an even, compact base.

  • Refrigerate while you prepare the filling.


Step 2: Bloom the Gelatin

  • Sprinkle the unflavored gelatin over the 3 tablespoons of water and let it bloom for 5 minutes.

  • Microwave the bloomed gelatin for 10-15 seconds until fully dissolved. Set aside to cool slightly.
