  • 12 oz pasta (penne or rotini)

  • 1 tablespoon olive oil

  • 1 lb ground beef or ground turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (15 oz) diced tomatoes

  • 1 can (15 oz) chili beans (or kidney beans)

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • Salt and black pepper, to taste

  • 1 cup shredded cheddar or Mexican-blend cheese

Directions

  1. Cook pasta in salted water according to package directions until al dente; drain and set aside.
