Ingredients:

1/2 cup chopped fresh cilantro
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green onion
1 tablespoon olive oil
4 large flour tortillas

Directions:
Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, sour cream, salsa, taco seasoning, cilantro, red bell pepper, and green onion. Mix well until all ingredients are evenly distributed.
Assemble the Pinwheels:
