🍗 Chicken, Spinach, and Mushroom Low-Carb Oven Dish
This rich and satisfying oven-baked dish combines juicy chicken breasts, earthy mushrooms, and fresh spinach, all smothered in a creamy, cheesy sauce—without the carbs! 🙌
🛒 Ingredients:
6 thin-sliced chicken breasts
1 small bag fresh baby spinach 🥬
1 container green onion cream cheese (8 oz)
8 oz shredded mozzarella cheese 🧀
1/4 cup olive oil
1/2 cup chicken broth 🍗
Dash of pepper
Dash of herb and garlic seasoning
Optional: 1 cup sliced mushrooms 🍄
👩🍳 Instructions:
1. Preheat Oven:
Set your oven to 375°F (190°C).
2. Sauté the Veggies:
In a large skillet, heat olive oil over medium heat. Add spinach (and mushrooms, if using) and cook until wilted. Season with pepper and herb & garlic seasoning.
3. Prepare the Chicken:
In a baking dish, lay out the chicken breasts. Spread green onion cream cheese evenly over each piece.
4. Layer it Up:
Top the chicken with the sautéed spinach/mushroom mixture. Pour chicken broth into the dish around the chicken (not over it), then sprinkle mozzarella cheese generously over the top.
5. Bake:
Cover with foil and bake for 25 minutes. Remove foil and bake for another 10–15 minutes, or until chicken is cooked through and cheese is bubbly and golden.
6. Serve Hot:
Let rest a few minutes before serving. Pairs great with a light salad or roasted cauliflower!
💡 Low-Carb Tip:
To lower carbs even more, make sure your cream cheese is low-sugar and check the label on the broth!
