Chicken Scampi
Ingredients:
1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup (1 stick) unsalted butter
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (adjust to taste)
1/2 cup chicken broth
1/2 cup dry white wine (or additional chicken broth)
1 tablespoon lemon juice
Salt and pepper to taste
1/4 cup fresh parsley, chopped
8 oz (225g) linguine or spaghetti (or your choice of pasta)
Grated Parmesan cheese for serving (optional)
Instructions:
Cook the Pasta:
In a large pot, cook the pasta according to the package instructions until al dente. Drain and set aside.
Cook the Chicken:
In a large skillet, melt 2 tablespoons of butter over medium-high heat.
Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Prepare the Sauce:
In the same skillet, add the remaining butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant (be careful not to burn the garlic).
Add the chicken broth and white wine to the skillet, scraping up any browned bits from the bottom. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to reduce slightly.
Combine:
Return the cooked chicken to the skillet. Stir in the lemon juice and cook for another 2-3 minutes, allowing the flavors to meld.
If the sauce is too thick, you can add a little more chicken broth or water to reach your desired consistency.
Toss with Pasta:
Add the cooked pasta to the skillet and toss everything together until well coated in the sauce.
Stir in the chopped parsley and adjust the seasoning with additional salt, pepper, or lemon juice if needed.
Serve:
Plate the Chicken Scampi and sprinkle with grated Parmesan cheese, if desired. Serve immediately and enjoy!
