Chicken Parmesan Casserole
Ingredients:
3-4 boneless, skinless chicken breasts (cooked and shredded)
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
1/2 cup panko breadcrumbs
1/4 cup butter (melted)
2 tbsp fresh parsley (chopped, for garnish)
Salt and pepper to taste
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
Layer the Chicken:
Spread the cooked, shredded chicken evenly across the bottom of the casserole dish. Season with garlic powder, Italian seasoning, and a pinch of salt and pepper.
Add the Marinara:
Pour the marinara sauce over the chicken, ensuring all the chicken is covered. Stir lightly to mix, if needed.
Top with Cheese:
Sprinkle the shredded mozzarella cheese evenly over the top of the marinara-coated chicken. Follow with a layer of Parmesan cheese.
Prepare the Breadcrumb Topping:
In a small bowl, mix the panko breadcrumbs with the melted butter until the crumbs are evenly coated. Add red pepper flakes if you prefer a bit of spice.
Add the Breadcrumbs:
Evenly spread the buttered breadcrumbs over the cheese layer to create a crispy topping.
Bake the Casserole:
Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.
Garnish and Serve:
Remove from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley and serve warm.
