Chicken Parmesan Casserole
Ingredients:
2 lbs boneless, skinless chicken breasts (cooked and cubed)
24 oz marinara sauce
1 cup mozzarella cheese, shredded
1 cup Parmesan cheese, grated
1 cup Italian-style breadcrumbs
1/4 cup fresh basil, chopped (optional)
1 tsp garlic powder
1 tsp Italian seasoning
2 tbsp olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
Layer Chicken:
Spread the cooked, cubed chicken evenly across the bottom of the baking dish. Season with salt, pepper, garlic powder, and Italian seasoning.
Add Marinara Sauce:
Pour the marinara sauce over the chicken, spreading it evenly to coat.
Top with Cheese:
Sprinkle the mozzarella and Parmesan cheeses evenly over the marinara-covered chicken.
Prepare Breadcrumbs:
In a small bowl, mix the Italian-style breadcrumbs with the olive oil. Stir until the breadcrumbs are coated with oil, which will help them crisp up in the oven.
Add Breadcrumbs:
Sprinkle the breadcrumb mixture evenly over the cheese layer.
Bake:
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbling around the edges.
Garnish and Serve:
Remove the casserole from the oven and let it cool for 5 minutes. Garnish with fresh parsley and, optionally, basil before serving.
