Ingredients
-
12 oz lo mein noodles or spaghetti
-
2 tablespoons vegetable oil
-
1 lb chicken breast, thinly sliced
-
2 cups mixed vegetables (bell peppers, carrots, snow peas, or broccoli)
-
3 cloves garlic, minced
-
¼ cup soy sauce
-
2 tablespoons oyster sauce
-
1 tablespoon hoisin sauce (optional)
-
1 teaspoon sesame oil
-
½ teaspoon ground ginger or fresh grated ginger
-
Salt and black pepper, to taste
-
Green onions, for garnish
Directions
1️⃣ Cook the Noodles
Bring a large pot of salted water to a boil. Cook lo mein noodles or spaghetti according to package directions until al dente. Drain and set aside.
2️⃣ Cook the Chicken
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 4–5 minutes, stirring often, until cooked through and lightly golden. Remove chicken from the pan and set aside.
3️⃣ Stir-Fry the Vegetables
In the same pan, add the vegetables and cook for 3–4 minutes until crisp-tender. Add garlic and ginger and cook for 30 seconds until fragrant.
4️⃣ Make the Sauce & Combine
Return the chicken to the pan. Add soy sauce, oyster sauce, hoisin sauce (if using), and sesame oil. Toss to coat. Add the cooked noodles and gently toss everything together until well combined and heated through.
5️⃣ Serve
Taste and adjust seasoning if needed. Garnish with sliced green onions and serve hot.
