Chicken Fried Steak with Gravy

Ingredients:
4 cube steaks (about 1/2 inch thick)
1 cup all-purpose flour
1 cup buttermilk
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and black pepper, to taste
1/2 teaspoon cayenne pepper (optional, for a kick)
Vegetable oil, for frying
For the Gravy:
1/4 cup pan drippings (from frying the steak)
1/4 cup all-purpose flour
2 cups whole milk
Salt and black pepper, to taste

Directions:
Prep Coating: In one shallow dish, mix flour, garlic powder, onion powder, paprika, cayenne (if using), salt, and pepper. In another dish, whisk together buttermilk and eggs until smooth.
Coat Steaks: Season cube steaks with salt and pepper on both sides. Dredge each steak in the flour mixture, dip in the buttermilk mixture, then dredge again in the flour mixture to ensure a thick, even coating.
Fry Steaks: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until shimmering. Carefully place the coated steaks in the hot oil, cooking 3-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
Make the Gravy: After frying, carefully discard most of the oil from the skillet, leaving about 1/4 cup of drippings. Lower the heat to medium. Add flour to the drippings and whisk until a light brown roux forms, about 1-2 minutes.
Add Milk: Slowly pour in milk, whisking constantly to prevent lumps. Continue cooking until the gravy thickens, about 5-7 minutes. Season with salt and black pepper to taste.
Serve: Spoon gravy over the fried steaks and garnish with a sprinkle of fresh black pepper. Serve warm with mashed potatoes or biscuits.
