Ingredients
-
2 tablespoons olive oil
-
1 pound boneless, skinless chicken breast, diced
-
1 red bell pepper, sliced
-
1 green bell pepper, sliced
-
1 medium onion, sliced
-
2 cloves garlic, minced
-
1 teaspoon chili powder
-
1 teaspoon smoked paprika
-
½ teaspoon cumin
-
Salt and black pepper, to taste
-
2 cups cooked rice (white, brown, or jasmine)
-
Fresh cilantro, chopped, for garnish
-
Lime wedges, for serving
Directions
1️⃣ Cook the Chicken
Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt, black pepper, chili powder, smoked paprika, and cumin. Cook for 5–7 minutes, stirring occasionally, until the chicken is fully cooked and lightly browned.
2️⃣ Sauté the Veggies
Add sliced bell peppers, onion, and garlic to the skillet with the chicken. Cook for 4–5 minutes, stirring frequently, until vegetables are tender-crisp.
3️⃣ Combine with Rice
Reduce heat to medium. Add the cooked rice to the skillet and toss everything together until the rice is heated through and coated in the fajita flavors.
4️⃣ Serve
Garnish with fresh cilantro and serve with lime wedges for a bright, zesty finish. Optional toppings include shredded cheese, avocado, or sour cream.
