Chicken Curry with Spring Onions

Ingredients:

Chicken pieces (boneless or bone-in)
Spring onions, chopped
Onion, finely chopped
Garlic, minced
Ginger, minced
Tomatoes, chopped
Curry powder
Turmeric powder
Chili powder
Coconut milk or plain yogurt
Vegetable oil
Salt
Fresh cilantro, chopped (optional)

Instructions:

1. Heat vegetable oil in a large pan over medium heat. Add chopped onions, garlic, and ginger; sauté until softened.
2. Add curry powder, turmeric, and chili powder; cook for 1–2 minutes until fragrant.
3. Add chicken pieces and cook until lightly browned on all sides.
4. Stir in chopped tomatoes and cook until they soften.
5. Pour in coconut milk or yogurt, stir well, and bring to a simmer.
6. Add chopped spring onions and salt to taste. Cover and cook on low heat until the chicken is cooked through, about 20–25 minutes.
7. Garnish with fresh cilantro if desired and serve hot with rice or bread.
