Chicken Bacon Ranch Potato Bake

Ingredients:
4 large potatoes, peeled and diced
2 chicken breasts, diced
6 slices bacon, cooked and crumbled
1 packet ranch seasoning mix
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup milk
2 tablespoons olive oil
Salt and pepper to taste
2 green onions, sliced (for garnish)
Optional: 1/4 teaspoon garlic powder

Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C). Grease a 9×13 inch baking dish.
Prepare Potatoes:
In a large mixing bowl, toss the diced potatoes with olive oil, salt, pepper, and garlic powder (if using).
Spread the potatoes in an even layer in the prepared baking dish and bake for 25-30 minutes, or until they start to turn golden.
Cook Chicken:
While the potatoes are baking, season the diced chicken with half of the ranch seasoning mix.
In a large skillet, cook the chicken over medium heat until fully cooked, about 5-7 minutes.
Assemble the Bake:
Remove the potatoes from the oven and lower the oven temperature to 350°F (175°C).
Top the potatoes with the cooked chicken, crumbled bacon, and shredded cheddar cheese.
Mix Sauce:
In a small bowl, whisk together the sour cream, mayonnaise, milk, and the remaining ranch seasoning mix.
Pour the sauce over the chicken, bacon, and cheese.
Bake:
Return the dish to the oven and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove from the oven and let cool slightly. Garnish with sliced green onions before serving.
