Chicken Bacon Ranch Potato Bake
Ingredients:
4 large russet potatoes, peeled and cubed
2 large chicken breasts, diced
8 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup ranch dressing
1/4 cup sour cream
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
Prepare the Potatoes:
In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
Spread the seasoned potatoes in an even layer in the prepared baking dish.
Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and slightly crispy.
Cook the Chicken:
While the potatoes are baking, season the diced chicken with salt and pepper.
In a large skillet, cook the chicken over medium heat until fully cooked and browned. Set aside.
Combine the Ingredients:
Once the potatoes are done, remove them from the oven and reduce the oven temperature to 350°F (175°C).
Add the cooked chicken, crumbled bacon, ranch dressing, and sour cream to the baking dish with the potatoes. Stir to combine all the ingredients evenly.
Add the Cheese:
Sprinkle the cheddar and mozzarella cheeses over the top of the potato, chicken, and bacon mixture.
Bake the Dish:
Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove the dish from the oven and let it cool slightly. Garnish with chopped fresh parsley, if desired.
