Chicken Avocado Ranch Burritos

Ingredients:
1 lb boneless, skinless chicken breasts
1 tablespoon olive oil
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1 avocado, sliced
1 cup cooked rice
1 cup black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1/2 cup salsa
6 large flour tortillas
1/4 cup fresh cilantro, chopped (optional)
Sour cream (for serving)

Directions:
Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with the ranch seasoning mix and cook for 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove from the skillet and let cool slightly, then slice or shred the chicken.
In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, and salsa.
Warm the tortillas in a dry skillet or microwave until pliable.
To assemble, place a tortilla on a flat surface and spoon about 1/6 of the chicken mixture down the center of the tortilla.
Top with sliced avocado, shredded cheddar cheese, and chopped cilantro if using.
Fold in the sides of the tortilla, then roll up tightly to enclose the filling.
Optionally, heat the burritos in a skillet over medium heat for 1-2 minutes per side to crisp up the tortilla and melt the cheese.
Serve the burritos with a dollop of sour cream on the side.
